With kids we don't have as much time to prepare healthy meals for our families. I'd love to share quick, healthy and inexpensive ways to feed our families.

One of my favorite ways to get sneak lots of vegitables into our diet is to make soups. I usually make a huge pot and freeze dinner size portions for later.

I can't wait to hear what others are doing.

Healthy Eating and Children Empty GREAT TACO RECIPE

1 pound chicken
1 can (14 oz) diced tomatoes
1 pkg McCormick Taco Seasoning

Simmer the above for 2 hours. At the end of this time, the chicken will shred apart really nice.

We add the regular taco stuff: lettuce, tom, cheese, sour cream, refried beans, etc

This would be fun too for kids! Add a fruit salad and its all four courses!

Check out recipes for meatloaf. You can add lots of different pureed vegetables that add both flavor and nutritional value! My brother in law recently made meatloaf for the family that had prunes and carrots in it. It was great!
